Our quality criteria Excellent raw ingredients We have extremely high standards in the selection of our raw ingredients. For example, we only use pure butter in the production of our laminated yeast doughs and our puff pastries because that’s what gives them their distinctive flavour! We make our own sweet and savoury fillings, mostly using our own recipes. Manufactured with artisan steps Our products are not mass industrial goods but are made using artisan methods. Regional suppliers For environmental reasons, we prefer to source our raw ingredients from local suppliers. 40% of our suppliers are located within a 100km radius of our facility. Genetically modified food – No thanks In compliance with EU Regulations (EG) 1829/2003 and 1830/2003, we do not use genetically modified raw ingredients. Sustainably grown palm oil Using sustainably cultivated palm oil is a matter close to our hearts. Ouvrir le clapet après 18 min. 10 12 22 Fours à convection : Phase 1 : apport vapeur avec vaporisation Phase 2 : chaleur sèche 17 à 20 min. entre 165 et 175°C. pendant 1 à 3 min. entre 100 et 130°C. Pour les beignets et autres produits cuits : Sortir les pâtisseries du carton et laisser décongeler à température ambiante pendant 60 - 90 min. Pour les bretzels et Flûte bretzel : Fours ventilés : Température du four : Préchauffage à 190°C / cuisson à 160 - 170°C Temps de cuisson total : 13 - 16 min. Adjonction de vapeur : aucune Laisser décongeler les pâtons pendant 15 - 17 min. Préchauffer le four, puis cuire sans vapeur. Fours à convection : Chaleur sèche 13 à 16 min. entre 170 et 180°C. Pour les tranche de strudel aux pommes : Fours ventilés : Température du four : Préchauffage à 190°C / cuisson à env. 160°C Temps de cuisson total : 25 - 30 min. Adjonction de vapeur : aucune Poser les tranches surgelées sur une plaque de cuisson (utilisez du papier sulfurisé) et les réchauffer dans le four préchauffé. Four combiné professionnel : cuire à 140°C avec 60 % d‘humidité pendant 20 - 25 min. Fours à étages : (Les paramètres exacts doivent être définis sur place en fonction du four). Température de cuisson : env. 20 °C au-dessus de la température valable pour les fours à chaleur tournante. Le temps de cuisson et l’adjonction de vapeur (si existante) demeurent inchangés. Micro-ondes (700 watts) : réchauffer une tranche pendant 3 min. 30 sec. environ et laisser la chaleur se répartir pendant quelques min. encore. 70
